These easy chicken skewers are full of complex flavors, but easy to throw together. Marinate the chicken ahead of time to make them even faster to pull together!
In a large bowl, mix together all of the ingredients, except the chicken.
Add the chicken breast cubes and toss to evenly coat.
Cover and marinate in the fridge for 30 minutes (or overnight for deeper flavor).
Thread the marinated chicken, pepper and onion alternately onto skewers, aiming for 4-5 chicken pieces per skewer.
Set the air fryer to 400°F and preheat for 3 minutes, if your model requires it.
Place skewers in the air fryer basket in a single layer, ensuring they don’t overlap (cook in batches if needed). Air fry at 400°F for 10-12 minutes, flipping halfway, until the chicken reaches an internal temperature of 165°F.
Remove skewers from the air fryer and let rest for 2 minutes. Sprinkle with fresh cilantro or parsley for garnish.
