This dip is creamy, cheesy, and has the perfect buffalo heat that will keep you coming back for more. Use leftover chicken breasts or a rotisserie chicken to make it even easier!
In a blender or food processor, combine the cottage cheese, buffalo sauce, ranch mix, garlic powder, and onion powder. Blend until smooth and creamy. This creates a flavorful base for your dip, with just the right balance of spice and creaminess. Adjust the seasoning with salt and pepper as needed to suit your taste.
Stir in your cheddar cheese (or whatever shredded cheese you prefer) and cooked chicken. If you're using leftover chicken, make sure it’s chopped or shredded chicken so it mixes well.
Pour the mixture into a baking dish and spread it out evenly. Place the dish in the oven and bake for 30-35 minutes, or until the dip is hot, bubbly, and slightly golden on top.
Once baked, remove the dip from the oven and let it cool slightly.
Store any leftovers in an airtight container in the fridge. Reheat in the oven as necessary.
Notes
Leftover rotisserie chicken works great here or even canned chicken.
If you don’t like spicy foods, start small with the buffalo sauce and add more to taste.
